So, I'm thoroughly enjoying my slow cooker this week! I can't believe I've just discovered this thing. We got it as a wedding gift and its been at the bottom of my pantry for 3 1/2 years. 
This is dinner for tonight. My Mom used to make this when I was little and it was always a huge favorite. Enjoy!
Makes 4-6 servings
6 large green peppers
1 lb. ground meet browned (I use turkey)
2 TBSP mined onion (I use more like half a cup)
1 tsp salt
1 tsp. garlic powder (I use fresh minced garlic clove and pepper)
2 cups cooked rice
15 oz. can tomato sauce
3/4 cup shredded mozzarella cheese
1.) cut peppers in half and remove seeds
2.) combine all ingredients except the peppers and cheese
3.) stuff peppers with meet mixture. Place in slow cooker
4.) cover. cook on low 6-8 hours or on high 3-4 hours.
Sprinkle with cheese during the last 30 minutes

They were a hit! I ended up baking them instead of using the slow cooker, because I was in a hurry (as usual). I put salsa on top and didn't have tomato sauce so I used tomato paste and water instead (me and recipes don't get along...I always end up winging it). Bruce loved them and was so happy to have something different! I've been in a total cooking rut these days!
