...we had a very yummy Italian Beef Stew. Aside from being delicious, it was probably the easiest dinner I've ever made! It was the first time I used my slow cooker and now I'm a big fan. Although I do not like most slow cooker meals I've had, chili, soup, stews and meats cook up great in there. So here's my recipe!
Italian Beef Stew
Serves 6-8
Ingredients:
1 1/2 lbs beef cubes
3 carrots, cut in 1 inch chunks
4 ribs of celery, cut into 1 inch pieces
1 - 1 1/2 cups coarsely chopped onion
2 - 14 1/2 oz. can stewed (or diced) tomatoes
1/3 cup minute tapioca
1 1/2 tsp. salt
1/4 tsp pepper
1/4 tsp. Worcestershire sauce
1 tsp Italian Seasoning
1.) Combine all ingredients in slow cooker
2.) Cover. Cook on low 8-10 hours or on high 4-6 hours.
I tend to add or take away from my recipes. I added more Italian seasoning, a little more of the W. sauce and added one can of water (using the can from the tomatoes). If you sprinkle shredded cheddar cheese over the top of your hold bowl and let it melt in the soup, its even better! Enjoy.
